I have a question. Why is dithering for videos and music only available on certain players?

Dithering for Videos and Dithering for Music are two separate functions. What players are missing dithering for music?

Sorry, my mistake. I don't think any players are missing audio dithering. However, many don't have video dithering. Why is this?

Because it's done at the driver level, meaning someone very familiar with that player needs to implement it.

So what does video dithering do exactly? I can't see a difference with it on or off.

Check out the "Dither" article on Wikipedia.  I notice improvements in shading and reduction of blocky artifacts when I turn dithering on.

The hardware codec targets don't have audio dithering, i.e. the supported Archos line of player. (Sorry, couldn't resist. ;))

How much the effect is visible depends on the content of the video or a picture. I have one video where it is very noticable in a large part where there are only very slight colour differences (dark sky).
