You can record audio from plugins, if that is what you want. You can even record and play at the same time. As an example of how to do this in general, you could have a look at this code:

This is a not-perfectly-functioning plugin I wrote that implements an RIAA deemphasis (IIR) filter, and might probably go some way towards showing you how to do some things.
