Plugins not launching

After downloading all the wads for the Doom plugin and put it in it's right folder but now no plugins will launch, I deleted the doom wads no dice, and I don't want to have to remove rockbox because I had to install and uninstall about 15 times before it ran at full speed.
If it helps I have a 5th gen iPod video.
It says "Incompatible Version."

when you installed and uninstalled rockbox did you replace the rocks folder as well? If you did not then that is your problem. The Rocks have to be replaced every time you replace the .rockbox folder.

On August 6, the plugins folder was reorganized.  Delete the plug-ins folder and reinstall Rockbox.  You should only have to do this once.

MY crystal ball is broken, so I can't help you unless you provide me more information about what exactly you have done.  If you delete the plug-ins folder (actually called "rocks") and then install a new build, you will have up-to-date plugins.

Look, I installed a new build of rockbox, and the plugins just say: incompatible model.

Rename your .rockbox directory to something else (or delete it entirely) and then install a new build.

Edit:  

1.  What bootloader are you using?  

2.  Make sure that there is no file called rockbox.ipod in the root directory of your player.

Okay, I got it to work, finally, I had to wipe out my old rockbox folder put in the new one and replace the rockbox.ipod file with the new one from the update.

You shouldn't have to replace any rockbox.ipod file with any other when you are updating.  Are you using the official bootloader?
