Is there any way to edit my rockbox so each file is displayed with its tag information when I view playlists instead of the file names?

All a playlist is is a list of filenames. For a playlist to display tag data instead, every file in the list would need to be opened and have its metadata extracted, running through the entirety of the list of files. There's a patch for it in the tracker, I believe, if you can compile and possibly resync the patch.
