how likely is it?

percentage wise, how likely is it for rockbox to cause unrecoverable problems with the ipod?

like messing up the hardware or something?

There's never yet been a confirmed case of it happening. In fact, the Rockbox installation process is safer than the official Apple firmware update.

The only reported damaged players we've had around here have turned out to be user error (bad third party chargers, for example).
