From what?

MP3Tag can easily do this from a well-organised file structure (other MP3 taggers are available)

There are also some online services that can analyse the content of the files and tag them, but I forget their names now...

The UsefulTools wiki page has a list of tagging programs - I know the Musicbrainz apps can "listen" to tracks and tag files from a list of known fingerprints.
