Weird DÃTÃBÃ~¹.TÃD and CÃNÆIÇ .CÆG files in .rockbox!?

Well, for the filesystem to get corrupted you need to pull the Ipod in the "right" moment. I don't know about Itunes, but I wouldn't be surprised if Itunes forces windows to flush all disk buffers after syncing to prevent such an issue. Rockbox can't to that, so when connecting the Ipod to the PC (using disk mode) you'll need to take care of that yourself. Windows XP also has an "optimize for fast removal" option that can help.
I don't think Rockbox file handling is be picky in any way -- Rockbox didn't corrupt the filesystem (well, at least I assume the problem occured by removing the Ipod from the PC without safely disconnecting it).

Do not forget that Rockbox boots into the "normal" Apple OS when you mount your iPod. Rockbox file handling is not involved.
