Ipod Nano and Ubuntu 7.04, default folders

Hi everyone, I'm a veeeery happy Ubuntu newbie and I need just an info:
how can I tell the system not to create everytime the "contacts, calendars...." folders, that are unuseful for Rockbox?
Do I have to modify the mounting options? Here they are:

Mount point: /media/IPOD
File system: vfat
Mounting options: rw nosuid nodev uid=1000 fmask=0077 dmask=0077 codepage=cp437 iocharset=iso8859-1 shortname=mixed utf8

These folders are created by the Apple firmware when you boot into it instead of using disk mode.
