Taking iPod/Rockbox screenshots

In the Rockbox manuals there are many screenshots. I'd like to take screenshots of my iPod nano.

How were these screenshots produced? Is there screen capture software that can take screenshots of iPod screens? Is there a rockbox plugin for taking screenshots? Is there an iPod emulator you can use to take screenshots? Is there some other method?

There's a screendump option in the debug menu. When enabled, plugging in or removing a USB cable takes a screendump instead of connecting.

They are usually created using the simulator -- see the UiSimulator wiki page.
