Yes, the Rockbox bootloader can dual boot. When you turn it on, you hold Menu down to load the Apple software instead of Rockbox.Bear in mind, Rockbox's *purpose* is to be a better music player, and it far outstrips the capabilities of the retail software anyway.
The boot settings can only be changed by recompiling the bootloader. You'll need to know a bit of C to change it (its a REALLY easy change though.)Or you can use the iPodLinux Loader2, as it lets you pick a default with a config file.
