My last rockbox update for my ipod video 30GB was a 20070111 build. I haven't been following the changes since then because I am basically happy with what I have, although better picture browsing and mpeg ability would be nice, I doubt much has been done with them, and it's not what I do with my ipod anyway...
I think I read somewhere so far that there is a new bootloader?... So is there any reason(s) that it would be worth my time to update to a newer build?

I tend to update at least once a day, personally, since I like to try to keep as up-to-date as possible. Really, though, you only need to update when you run into bugs before you report them (in case they've already been fixed in more recent builds), or whenever you see a change you like (such as new features, improved battery life, etc.)

I haven't updated my version of Rockbox for nearly a year now. I did update it once but there were a couple of bugs in the music playback so I reverted back to the older version.
More recent releases don't really benefit me (as far as I can tell) since I've got an iRiver H120. I still read the forums though because I find Rockbox interesting and it's good to see what new features are available for other players.

buffering of audio and meta data has been improved considerably only two days ago. worth updating imho.
just do it... what are you afraid of?

I'm also a little over enthusiastic updating the build, and although on the whole I don't have too many issues I do occasionally get caught out.
Just today I've noticed my iPod Video 80GB is now losing its settings after shutting down... It's never been a problem before, but has just started to lose the playlist, theme settings, all playback settings etc. etc. (Build 17128-080415). It's done this three times now since last night, and I'm yet to identify what if anything apart from shutting it down causes it to happen.
I'll try the latest again tonight, and if this persists I'll be reverting back to a build that's a few days older.
FWIW, if I've been happily using a build for a few days without any issues I just rename the ZIP file "rockbox-stable.zip" rather than overwrite it - at least that way then you can always jump back to a version you know should work just fine.

Back when the builds were "flaky" quite some time ago now... Gosh, I can't remember even close to when it was anymore, date or revision numbers... I started keeping two copies of the Rockbox builds, the most recent one I knew worked well enough and the very most recent one, both named with the revision numbers on them, that way if the most recent ended up being a dud, I had a working backup. Lately, I've not needed the backup, but I still do it out of habit, since it's only a very small portion of hard drive space taken up and a few seconds to add the revision number to the file name.
I usually only needed 5 minutes to tell if a build was good, since that's the longest I could get it to play before it crashed/stalled/whatever, the builds were that iffy back whenever that was again...

...but I've since discovered it had nothing to do with the build but was in fact due to an error on my drive that chkdsk reported:
\.rockbox\config.cfg is cross-linked on allocation unit 363377.
No wonder it was having problems retaining the config!
I suspected that might be the case as the last time I had a slight issue following the use of an updated build, there was an obvious fix posted a couple of builds later.
